At the moment, we roast on Tuesdays, Wednesday and Thursdays. Orders placed after midday on Thursdays will join the following Tuesday's roast cycle.

illamaría is a delicious sugarcane decaf from the Caldas region of Colombia, just outside Manizales. This lot was processed at the Jamaica drying station in Chinchiná, which brings together coffees from 30 to 50 smallholder producers farming in the nearby highlands of Villarazo. The station’s lower altitude and warmer climate make it ideal for processing, while the coffee itself is decaffeinated nearby in Manizales using the sugarcane (EA) method—a natural process that uses a by-product of local sugarcane to gently remove caffeine while preserving flavour. The result is a sweet, balanced cup that’s full of character—without the buzz.
